Instagram shows about the first 125 characters or 2 lines, then “more”.
Step by step
Write it with the gaps you want, here or in your notes app, and paste it in.
An invisible character keeps the gap blank. A dot is the old-school look.
See it as Instagram shows it, and what shows before “more”.
Tap Copy caption and paste it into your post. The spacing stays.
Why it works
A line with nothing on it can be dropped, so two paragraphs run together. A line holding one invisible character is not empty, so it stays.
A space at the end of a line can make the break after it disappear. The generator trims every line end.
U+2800, the blank Braille pattern. Instagram, iPhone and Android all draw it as empty space, and it counts as one character.
Instagram does not document when it drops line breaks; this is what creators and the apps that post for them see. The fix is harmless when nothing would have been dropped.
Questions
Write the caption with the empty lines you want, paste it here, and tap Copy caption. Each empty line now holds an invisible character, so Instagram keeps the gap when you paste it into your post.

U+2800, the blank Braille pattern. Every phone and browser draws it as empty space, but it is a real character, so Instagram keeps the line. If you would rather see something, pick the dot instead.
Yes, as one character per empty line, toward Instagram’s 2,200. The counter here includes them.
After about 125 characters or 2 lines in the feed, behind “more”. Empty lines count as lines, so a gap near the top hides more of the caption. Put the hook first.
